In my opinion if your going to use it much at all? Get a popular brand NOT made in China. Chinese are generally lower quality. Besides if you get a common brand name you will have way better quality and better resale when you want to upgrade.

They are all the same "Brand." All the same chinese crap too. I can't recommend any of them. Save a few more dollars and buy a used Japanese bike. It will save you money in the long run, and they are far superior machines in every way.

for you lower budget I would go with something from some where like bikesdirect.com....you'll get a better bike for the price then at most shops

something like this
http://www.bikesdirect.com/products/motobecane/fantom_comp08.htm
rockshox tora 130mm travel
avid hydro disk brakes
shimano deore XT components
great wheels and hubs

Assembly is very easily for any bike ordered, bike shops are given way to much credit for "build" a bike, all that is really necessary is pedals, front tire, and handel bars, this only take about 15 mins for any Component person. you may have to adjust the derailleur as well but this will only take about 5 more mins. so about time you would spend driving to a bike store, plus not all offer free tune up, all in my area offer on after a year, (with out wheel trueing) not much good considering you will already have had to adjust the derailleurs by then to compensate for cable stretch.

also look at the prices and parts you get, you don't get lower end parts for the same price as you would in a bike store

As Graham R. pointed out - bikes direct is great. I will add this - ONLY if you know exactly what you are looking for & know in advance what frame size you need. Remember also - you assemble the bike.

I would at least look in several real bike shops to get an idea of what frame size you need & what components you need/want. A real bicycle shop will let you test ride any bike. Bikes Direct does not afford you that luxury. A real bicycle shop will have FREE follow up check-ups/tune-ups. With Bikes Direct - you do it yourself. A real bicycle shop will have immediate answers to your questions. Bikes Direct will take one to two days to answer an email question - maybe longer.

I have nothing against Bikes Direct. I'm just "PRO" local bike shop. The 2011 Raleigh Talus 4.0 goes for $459.99 here in the mid-west. I would be looking at this bike or higher. If you do decide to go with bikes direct - another site - Bicycle Tutor.com will be very helpful in assembling & adjusting your new bike. 2nd link down.

I think that you did pick 3 good options, I had a EX8, which is pretty much the same frame as the EX5, and it was a pretty solid bike. I also like the Camber, but I haven't seen or ridden one.
